”Fresh, locally grown greens, all year round.” A simple idea, with a deceptively complex system behind it - a building system that we’ve been collaborating with Square Roots to deliver in a faster, more reliable, and more efficient way.
Square Roots is an urban indoor farming company growing local, wildly-tasty food while training the next generation of leaders in agriculture. Over the past several years Via Chicago has been working side-by-side with Square Roots to help expand their footprint across the Midwest. Built from shipping containers, Square Roots' distributed network of modular farms are able to recreate ideal growing conditions from around the world - without pesticides or GMOs. This will dramatically reduce the amount of energy needed to move food from farm-to-table, as each load of greens leaves the farm and enters the supply chain in a matter of feet, not miles.
